3. Research Topic
I am conducting a statistical analysis of the influence of global environmental factors, i.e., acid rain, on human health in each life stage by examining nutritional changes in food and agricultural products.
 

4. Research Summary
Environmental changes (climate change, acid rain, global warming, ozone depletion) affect the cultivation environment, for example soil, of crops. My purpose is to measure qualitative changes in different foods, and, as a result, understand the changes in the nutritional values of food. Changes in nutrients directly affect human health, and impacts such areas as eating habits, food safety, and sustainability of the food supply. However, there is little research on what kind of influence environmental changes have on the composition and nutritional values of food.
My research examines changes in food composition over a 60-year period, with a n emphasis on correlating this data with changes in the environment. This was done by analyzing nutrient levels from standard tables of food composition levels in Japan. In addition, I look at the changes in food composition, and nutrient levels in daily meals across all life stages in order to understand their relationship with various health factors.
